An overflowing zucchini patch, plus my new no-gluten diet, led me to try out zucchini as a substitute. Results? Delicious!
The key was a trick found in Cooks Illustrated – after salting zucchini and letting it sit in a colander for about 30 minutes, you bundle it up in a dish towel and squeeze all the water out! I just sauteed this in a little oil and topped with our favorite spaghetti sauce. So delicious!
