Turkey chili for a chilly night

There’s no real justification for posting this recipe on a gardening blog, except that it was delicious, my husband and I made it from scratch, and we wanted to remember the recipe!

Hearty chili

This hearty turkey chili is so simple to make!

2 tsp. vegetable oil
1 large yellow onion, diced
1 package 93% lean ground turkey
1 can fire-roasted tomatoes with garlic (we used Hunt’s)
1 can Great Northern beans
1 cup chicken stock
3 chipotle chiles in adobo sauce, plus ~4 tbsp sauce
4 tbsp. chili powder

Heat vegetable oil in large pot. Add onion and cook, stirring, until softened. Add turkey and cook, stirring, until browned. Add tomatoes, beans, stock, chili powder, and chiles and sauce. Season with salt. Simmer, stirring occasionally, for about 20 to 30 minutes to let the flavors combine. Remove chiles before serving.
